Being Australian you would think I’d know my way around a Pavlova, however this was actually my first attempt! The twist on the traditional of adding a sponge was a lovely change, & though I wanted to keep it as true to the recipe as possible, I did add some raspberries along with the strawberries. Growing up my mum would always make her Pav with raspberries, so for me the flavours go hand in hand & remind me of my childhood. Though it’s winter here at the moment we were still able to have this cake for afternoon tea in the garden (that’s Queensland for you!) & it was a huge hit around the table.
