Every time I visit my grandparents farm I return home with boxes of citrus. There is only so much orange juice one person can consume, and so I have been on the hunt for creative ways to bake with the copious amounts of lemons, oranges and limes in my kitchen. This has taken the form of orange and lemon syrup cakes, adding an orange twist to Nigella's chocolate olive oil cake and even baking lime and coconut madeleines. I was so excited to discover this recipe because I had never thought to make curd before - and what a wonderful way to churn through those lemons! I was surprised by how easy it was to make, and even more surprised by how much tastier even my first attempt was than store-bought.
