I love Pecan pie, from when I was lucky enough to live in Chicago for a few years. I have been back in the UK for a good few years, but as winter rolls in, this is the pefect pie for after a long cold walk with the dog. I used a sweet shortcrust base, but loved the idea of mixed nuts. So I used Pecans, walnuts and,the king and of nuts, macadamias. They all compliment each other perfectly. With a nice dollop of clotted cream, I am in heaven.
