I created a mini version of Nigella's strawberry meringue layer cake for a more personalised portion. This recipe was so easy to make but the results make for an impressive dessert! The sweet yet slightly tart strawberries perfectly balanced the cake and meringue. I loved how the almonds and meringue added a crisp texture to the soft, pillowy whipped cream. This is a stellar of a summer dessert and I would make it again for a special occasion.
