This is the Norwegian version, elected through votes sent in to a popular radio program in 2002 as Norway's national cake. It is called Verdens beste in Norwegian, (Worlds' best) or Kvaefjord cake, We mix a little bit of vanilla flavoured custard in the whipped cream, that way we get a little stiffer cream and a lovely colour. The eggs used in this cake are from my friend Camilla's farm. The adding of the custard at is the only difference per se. We mostly make it without berries, because the summer is so short and we can only get Norwegian strawberries for a short time! The corn flour is substituted by potato starch, as that is something that is locally produced in Norway, and it guarantees a light and fluffy cake, As a Norwegian I am kind of proud, because last cookalong had a Norwegian recipe, and this months' also has Norwegian roots. We have more than a long winter and the Northern lights! Norwegians love cake :-)
