Taking inspiration from a delicious Bloody Mezcal Margarita I recently had, I added a touch of chilli, salt and Mezcal to the cake batter. It gives a beautiful spicy finish to each fudgey bite. To finish, I replaced the tequila in the Margarita cream with more of the beautiful, smokey Mezcal. The combination of chocolate chilli cake and tangy lime cream with a hint of smoke is sublime. Transports you to afternoon cocktails on Tulum beach, Mexico.
