I love pumpkin and I love cheesecake! I was so excited to see Nigella has a recipe for this beautiful dessert! I wanted to make it my own, by integrating a bit of the culture where I am currently living, Holland. During this time of year we eat "kruidnoten"which are small round cookies with lots of spices, mainly cinnamon. I used these delicious cookies instead of Digestive and it was a hit! I also added a bit of cinnamon and nutmeg to the pumpkin mix. Here in Holland they used the windmills a lot for grinding the spices, so I had to spice it up a bit more! :) I was very glad to learn that it is better to cook the cheesecake au bain marie. I could, however, not do it this time because I did not have a big enough tray to put my cheesecake tray in. This is why I it burned a bit on the sides, while the middle was perfectly cooked. It still tasted delicious! Now I know better, though. So thanks for the tip! It was lovely to learn this new recipe and looking forward for the next one!! Thanks!
