I had a struggle with the icing when the ginger juice seemed to just soak in to my thirsty paper towels/kitchen roll? Before wasting it all I switched over to a microplane zesting tool, collecting in a small tea strainer and flushed through some simple syrup to get it to run through. It made 3 tablespoons. My husband, who does not like cake with icing, said he liked it very much.
