Oh my.. this carrot cake recipe beats all other recipes! The texture was so delicate and light. For a more pronounced flavour, we (me and my friend who love to bake) added half a teaspoon ground cardamom. We were so surprised about the ginger juice in the icing! Added a nice sharpness to beat the sweet cream. We had a lovely afternoon baking and photographing!
