My cake tasted wonderful. I used finely chopped stem ginger and syrup in the sponge mixture and used the crystallised ginger on the top. I added some yellow sprinkles on the top to complement the colour and flavours of the cake. I toasted the walnuts gently before I used them as I think this brings out the flavour.
