The cream filled cookie is one we always make for the holidays - our version using a raw egg yolk in the custard filling and a small circular cutter. This recipe allows us to leave out the problematic raw egg, which has worried us, and the shape is so lovely with the pricked edges. I could not find a corn holder in my drawers, so I broke off the end of a toothpick parasol and used that instead!
