Today, I went completely out of my comfort zone and baked this Pear, Pistachio & Rose cake. I don't usually bake cakes, as I am not great at it. But today, this cake came out absolutely perfect. The apricot glaze cuts down the richness of the cake and it is a delight to eat. I made my own little twist by substituting half of the eggs with chia seeds and that gave the cake a beautiful texture. This is my entry to the May 2018 Nigella cook-along.
