This May recipe was perfect as it coincided with Australian Mothers' Day. My mum, being a Turkish Delight fiend, was delighted to be presented with this cake after lunch. Using Buerre Bosc pears, I stayed faithful to the recipe - but I couldn't resist adding a whisp of pistachio fairy floss to the top, and serving some nutmeg cream alongside. Perfection.
