
Cardamom-infused Pistachio, Pear & Rose Cake, with a Rose-Mascarpone Icing. I loved this light sponge made of ground pistachios, ground almonds, and pears. I added a teaspoon of ground cardamom, giving the whole cake a wonderfully delicate spicing. It was baked in two sandwich tins, and assembled with rose-mascarpone and fresh strawberry jam in the middle and on the top, decorated with ground pistachios and dried rose petals.
