Dear Nigella, I have made some fuss with this no-fuss cake! I couldn't find lemon curd in the nearest shops (not a well-known thing in Hungary) and didn't wanted to take the tram to a better-equipped deli in the heatwave. Instead I have made my own lime curd, first in my life! It is so delicious and easy to make, I definitely will do it again! I have used brown cane sugar, that's why the color of the cream is light brown. I also put some fresh finely chopped mint leaves into the cream. I have used raspberries and blueberries, and also put some fresh lime juice and a hint of brown sugar on the blueberries (not on the raspberries though, I did not want to brake them). To finish the cake I put some lime peel confit and chopped mint leaves on it. It is the most delicious fruit cake I ever had! Greetings form Budapest, Ildikó
