We're on holiday in Snowdonia and there are just so many lucious blackberries dangling on the bushes. The lemon curd in the shop looked a bit iffy so I replaced it with seived jammy blackberries and apples, both gathered from the hedgerows, which turned the cream cheese a wonderful pink and then added a layer of freshly made blackberry jelly under the fruit. Perhaps it was not quite as quick as the original but rain had driven us inside and I was pleased to play. It tastes delicious.
