Here is my Gingery Galette with Blackberries and Peaches. I made some modifications to the original recipe by including the bounty of the peach season that we are having here in the Niagara Region, Ontario, Canada. Niagara peaches are renown across southern Ontario for their velvety fuzzy skin, coral flesh and lusciously sweet juice that is so gratifying it can only be considered elixir for the gods in fruit form. (The Niagara region’s geographical positioning between two lakes generate intensely hot and humid summers, ideal for growing peaches). To give the pastry a depth of spice, I added ½ teaspoon ground ginger and 1 teaspoon freshly grated ginger. To add an extra level of ginger flavor, I topped this fruity pizza with chopped crystallized ginger. Since crème fraiche is not readily available in Canada, I used sour cream instead.
