I L.O.V.E. the base of this cheesecake - the pecans really come through and taste so delicious with the maple. This bake involved a late night dash to the shops to buy a roasting pan large enough to fit my springform cake tin! I’m not going to pretend it was a perfect bake (a few bubbles on the top), but it was a silky smooth consistency and tasted so good.
