I decided to try out half the quantity and instead of a tin I used 4 small ramekins. I had to use an all digestive biscuit base as I'm allergic to nuts and I cooked the cheesecakes in a bain-marie for only 30 minutes. I'm pleased to say they turned out great (although it was hard to get them out the ramekins in one piece! I then topped them with fresh strawberries, kiwi and raspberries and finished off with a pouring of maple syrup and it was DELICIOUS! Thank you for such a wonderful recipe Nigella!
