My daughter Anna (aged 10) baked the cake and we styled the photo together. Boiling the clementines filled the house with a wonderful fragrance. Anna followed the advice given and covered the cake with foil part way through baking. This really did work in preventing it becoming too brown. The cake is deliciously light, moist and fragrant. We ate slices of it by itself when fresh and after a couple of days, we ate it as pudding with lashings of vanilla custard which was equally delicious.
