The cake was done entirely by hand – my kitchen not being large enough to accommodate a food processor or KitchenAid mixer. For the decoration, I caramelized mandolin-thin slices of clementine in a simple syrup, and poured the rest of that caramel syrup over the arranged slices for a hard and glassy finish.
