I've made this cake every St Patrick's Day for the past 8 years. As an Irishwoman living in England, it's become my tradition. My colleagues at RNLI HQ would not hear of a year without it. This was the best photo I could take before they demolished it (and it's not even noon). I like to draw a shamrock in the icing, as they do in the top of a creamy pint of Guinness in the pubs of Dublin on St Patrick's Day. Sláinte!
