This is the cake that I made for my mums birthday recently. She absolutely loved it, and as I am not exactly a proficient baker I was ecstatic with the result! The cake was moist and tender with a beautiful scent of rose water. The cardamom really lifts the cake to the next level and was perfect with a cuppa. I decorated mine with pistachios and also beetroot juice dyed apricot pieces for a bejewelled look - it was mum’s birthday after all!
