I had to go off-piste with this last minute entry as my first attempt with strawberries didn't turn out at all well. So I used gooseberries from the garden, flavoured with elderflower, and eked out the whipped cream with Greek yogurt which gave the topping a lovely tang. Luckily this was much more successful, a perfect pudding for early summer.
