I was particularly impressed that I was able to calmly produce this awesome creation on a Tuesday night after a long, busy day in Johannesburg, South Africa. It turned everyone at our Wednesday night meeting into firm fans! My own (lazy) twist was to melt the chocolate in heated cream and then beat all the ingredients together in one swoop while the biscuit base waited patiently in the fridge. It didn't look as smooth as the professional version but I liked the texture and loved the taste. I'm going to try our local favourite Tennis biscuits as a slightly coconut-flavoured base next time. And maybe pineapple juice instead of lemon?
