This is actually our favourite no-bake cheesecake. Since I’ve made it for the first time, it’s on repetition here at home. Sometimes I use dark chocolate digestives for the base, sometimes I use hob nob biscuits and other times, I just go with the girgernut biscuits the recipe asks for. Either way, it’s always a big hit and devoured with pleasure. I’ve served it many times with no toppings at all but, this time of the year, I love to top it with fresh seasonal berries, micro basil leaves and a few fresh lavender flowers from the garden.
