Here’s My Sunshine on a rainy day. I used oaty biscuits for the base, this gave a lovely crunch & I added lemon zest to the lemon curd for a zingy tingle on the tongue. Tasty quick dessert, you don’t have to wait long before you’re snuggled up with a large piece. You can’t help but smile.
