Making this cheesecake was a lot of fun. Cheesecake deserves a lot of respect because of all the little details that can effect the outcome, from using room temperature cream cheese to not over mixing to making sure the jiggle at the end is the right amount of jiggle. This is the third cheesecake I’ve made in my life and I finally felt comfortable and confident with the whole process. I added a caramel swirl and pecans for some personalization. Thank you!
