My daughter wanted fondant on chocolate cake for her birthday. My husband gets most of the credit for this cake, which we rushed to put together for a busy school night. We used the incredible frosting in the centre, then used raspberry jam under the fondant. When the cake was cut, the pink fondant contrasted nicely with the rich dark brown colour of the cake. This cake disappeared very quickly.
