My mom loves cinnamon, and so I made these as an extra treat for her 60th birthday today! My father's family is from Norway and I used my grandmother's favorite pie dish, quite apropos. The only substitutions I made were light brown sugar throughout, as I like the twinge of molasses with the cinnamon, and I upped the cinnamon in the filling since my mom loves it so much.
