This was for my son’s Covid-lockdown 21st birthday so it had to be memorable. In the cake, I used Lindt’s Excellence Intense Orange dark chocolate that also incorporates crunchy roasted almond for extra texture. I wanted it all to be reminiscent of childhood birthday cakes but, insanely, Cadburys Australia doesn’t produce chocolate buttons, so I settled for Australia’s iconic Jaffas (bright red chocolate orange balls, not the biscuits) Maltesers and, because he’s all grown up, Lindt’s dark chocolate and mango fruit sensations. It was a wonderfully rich melange of deep chocolate and a slightly sharp tangs of tropical citrus fruitiness I think he’ll remember his 2020 cake
