Although my sister and I wanted to head back home to Vietnam to be with our parents during these times, we felt it would be safer for everyone if we stayed put and stayed home. However, this didn't mean we couldn't celebrate Easter with this amazing cake that uses few and simple ingredients! Unfortunately, because we're trying to limit the number of grocery trips, I had to make do without the mini eggs. I put a little twist on it by adding some instant espresso and nutmeg for some added depth of flavor - it was absolutely delicious!
