It wouldn't be Easter without this Easter Nest cake! My mum first baked this 15 years ago and I now make it every year for my family. It has everyone coming back for seconds. It has the richness and denseness of a chocolate cake but the lightness of a mousse. Its natural cracks and crevices put at rest the need for perfection and are part of its charm. Quite simply splendid.
