Easter Egg Nest Cake No flour? No problem! This cake is a dream, and was described by my partner as almost mousse-like in texture; light and airy. Making and baking the cake was straight forward, feeling like I nailed it on the first attempt. Definitely has been added to my repertoire and one I will be returning to for sure. I deviated slightly from Nigella's recipe in that I didn't have the required amount of dark chocolate for the recipe, but I made up for it with some M&S dark chocolate truffles left over from Christmas (I know, I had chocolate left?? Well, not anymore!) in the cake batter and for the topping which worked tremendously. I also used a packet and a half of mini eggs as I don't feel like you can ever have enough of them, and was frustrated the majority were white and not popping with colour. Dropped some off with family and friends (packed with gloves and following guidelines) leaving boxes of joy on their doorsteps as a treat to spread some love at this incredibly difficult time, and this cake definitely did just that!
