My scone topping was inspired by those little rhubarb & custard boiled sweets (which I adore) - a homemade rhubarb compote, coupled with a silky custard-cream. Simply delicious served on top of these light as a feather scones. Love the addition of the cream of tartar to help achieve this airy texture. The taste brings back fond memories of my time living in England.
