I was rather surprised when I realised that this was the first time I've actually made scones, and I must say that I felt as though I was cheating on my mum for not using her famed recipe! I split the dough into three to make a selection of plain, cheese (parmesan & cheddar) and white chocolate and raspberry scones. On reflection this was a sure-fire way of being able to justify eating a scone at any time of the day. I totally forgot to add the bicarb, only remembering once I had begun the kneading process, however it doesn't seem to have impacted the result too negatively. The white chocolate and raspberry were undoubtedly the winner in my eyes, perfect balance of the light and fluffy scone to the sweetness of the chocolate and fruit. Definitely recommend. Just a scattering of both white chocolate chips and fresh raspberries with a generous dusting of extra flour to balance the moisture. I do hope that Lily doesn't tell my mum! x p.s. the placement of the books is not for brownie points, I had them out for a Sunday morning read and they provided an excellent stage for my Instagram shots!
