I loved this fruit tart. It's so easy to make and tastes like a delicious lemony cheesecake. It was a perfect treat for my 30th birthday, which I unfortunately could not spend with my friends and family back in Canada. I made my own refined sugar free curd with maple syrup and lemons from my mother in law's tree. It's winter in Australia so the only cheaper in season berries I could get were blueberries and strawberries. I will have to try this again with raspberries and cherries when they are in season. My only criticism with the recipe: I measured everything by the gram but my base was still quite crumbly. However, I did use a mix of malt and ginger snap biscuits I had on hand, rather than digestives.
