My 12 year old daughter and I are Scottish expats living in Washington State, USA. We have a homestead and we used wild blackberries and grapes we grow in our fields, rather than red currants. We don't have a 2" tart dish so we used a 1" dish instead. We also don't have digestive biscuits here (hard to find on the West coast!) so we used Graham crackers. Our last tweak was to add a drizzling of homemade raspberry coulis.
