Nigella describes how she “happened” upon the composition of this recipe; she also said that as long as I stuck to the polenta crust, any fruit could be used (that almost certainly that means eggplant, tomato, and herb cream cheese will be gracing this ever hospitable crust very, very soon). So...in typical Cierra fashion, I happened to take a few liberties, and prayed for the best! I’m super excited to have this recipe in my pocket ya’ll! The mixing, construction, and assembly cost less than 30 minutes, baking time is around 20ish; meaning that within an hour, you too can be hailed the Domestic Goddess you already know you are. The polenta crust was everything!!! Think shortbread crust, but crumblier and heartier. I slathered a cream cheese/sugar/egg mixture at the base, next came my blackberry and ginger jam, and then fresh peaches from Chile’s Orchard in Crozette, MD. All of my loves approved (especially Straxy Boi)!
