Don't know if this is legal, but this is my second attempt at this galette, which I think was more successful. In my first attempt, I had trouble with the dough. It stuck to the rolling pin, it stuck to floured surface. It stuck to the parchment-lined baking sheet so the only way to get it out in one piece was to slide the parchment paper onto my serving plate and cut away the parchment paper. I couldn't get nice pieces off for serving. It tasted delicious despite coming off in a jumble and I had some more berries left so I tried again. This time I baked it in ramekins with the dough on top. The dough was wonderfully crispy. I think next time I will try using a larger, more shallow baking dish, dollop the creme fraiche over the berries and put the dough on in pieces so the creme fraiche stays more intact. It is so delicious I want to improve my technique so I get it right.
