Thankful is how I feel this November despite all the weirdness that is 2020. Although our Thanksgiving celebration will be 2 people instead of 26, this cheesecake will grace the table. I'm guessing everyone looking on from Zoom will request a repeat for next year when we can dine together again. Making this cake was simple and fun. I liked how the food processor was used for both crust and filling. My roasting pan did not accommodate the springform so I used my large cast iron skillet which did the trick. Improvisation has been key in 2020.
