I was originally just going to do Nigella's Maple Cheesecake recipe, and leave it at that. How could anyone improve Nigella's recipes? lol But I remembered taking a lunch stop with the family at a restaurant in Kentucky, on our way to Florida. We had this amazing Kentucky Bacon Bourbon pie! So, I came up with a topping that reminded me of that! Maple-Bacon Bourbon Pecan Topping! Toast 1 1/2 cups pecans in a 325 degree oven for five minutes to toast. Coarsely chop. Fry up 4-5 slices of bacon. lay on paper towels, then coarsely chop. Heat 1/2 cup sugar and 2 tbsp water to a boil on med-high and simmer, without stirring, until sugar caramelizes(about 5 minutes). Remove from heat and whisk in 1/2 cups heavy whipping cream. Put back on burner, on low, and whisk in 1/4 cup butter, 2 tbsps bourbon, 1/4 cup maple syrup, pinch of salt, 1 tbsp corn syrup. When this is mixed, add in chopped pecans and bacon. Use warm as a sauce, immediately. Or pour on cheesecake, and just refrigerate until ready to eat. This is so amazing together! It's like Nigella and Kentucky Chef, Edward Lee did a collaboration! ha ha!
