My Linzer cookies with a Macadamia twist in a salute to an Aussie Christmas. Without, fancy mini-cutters or a suitably round cookie cutter, I decided to make stars and make my whole in the middle with an icing nozzle. Initally I thought my mixture was all wrong - it seemed so oily and I started to lose faith in the process but I persevered and was able to produce these biscuits to give to my star employees at our Christmas lunch today. The warmer weather in Melbourne made my Linzer bicuit making efforts a bit more difficult but I managed to finish! I love reading your recipes Nigella and I almost can imagine you are sitting across the bench telling me to keep on going, don't give up! Merry Christmas everyone!
