These are my Raspberry Hazelnut Linzer Cookies that I make every Christmas! I use finely ground hazelnut flour for the cookie dough, and some ground freeze-dried raspberries. The filling is homemade chocolate hazelnut praline. I finally sprinkle the tops with a mixture of powdered sugar and freeze-dried raspberry powder.
