We loved the Linzer cookies. The texture and flavors were amazing. I’m not a fan of hazelnuts so I used almonds and added a little almond extract and filled the cookies with raspberry preserves. I made a second batch and substituted lemon zest for the cinnamon and filled those with apricot preserves, a yummy combination. Keeping the dough chilled is very important, especially when cutting the decorative hole in the top cookie. These will be part of our family’s Christmas cookie tradition.
