I made the lemon pavlova for my best friend coming for dinner, that’s him holding it in the picture. He lives in Scotland and I live in London so we don’t get to see each other often. But having been in hospital with Covid over New Year I came back to Scotland to recuperate in March. Seeing my friend was very special after having Covid as they were there for me throughout the whole time by phone and text. The pavlova was easy to make and it tasted so good that my friend and aunt ate 2/3’s of it in one sitting! I’ve been asked to make another one for next weekend and going to divide the recipe and make a small lemon one and a small passion fruit one.
