I find meringues almost impossible to get right - perhaps not helped by having a fan oven. I was quite pleased with this one but even though I left it in a turned off oven for about an hour, it still started to crack once I took it out. I think I over whipped the cream a bit too! I made the lemon curd (too many egg yokes to throw away) and added some small homemade lemon meringues on the top just for a bit of added colour.
