As a kiwi we take our pav’s rather seriously! So I was excited to try out this recipe. Here’s my rendition of a lemon pavlova complete with homemade lemon curd and also homemade limoncello!! I added my own twist adding some marscapone and limoncello to the cream and using some whole toasted hazelnuts for an extra crunch sensation! I find the zing of the pomegranate arils a bit of fun for the eyes and the tongue. Add a glass of homemade limoncello and it’s a feast fit for a Queen!
