This fluffy cheesecake filling and the ginger cookie crust reminded me of my favorite lemon pie, and while this cheesecake is delicious all on its own, I had to try it with lemon curd. The tart lemons, the creamy vanilla cheesecake and the spicy ginger crust (I used ginger snaps) made this a bright, balanced dessert. The burst of fresh summer blueberries sent it over the top.
