My 60th birthday cake - 2 layers of vanilla with 1 of chocolate in the middle. I made a double batch of the ermine frosting and coloured it teal to match the theme, and added various sized pearls and edible butterflies. The ermine icing held up well but stayed soft and didn't go crusty like regular buttercream can.
